English Muffin Breakfast

Servings: 1 whole english muffin

INGREDIENTS:

  • 1 each English muffin, cut in half and toasted
  • 1 ½ tbsp. Ricotta cheese, part skim
  • 3 strips Roasted red bell peppers
  • 2 slices Avocado
  • 2-3 Leaves Fresh basil
  • 1/4 tsp. Crushed black pepper
  • Drizzle extra virgin olive oil

DIRECTIONS:

  1. Toast english muffin.
  2. Spread ricotta on english muffin.
  3. Add roasted peppers, avocado, basil, black pepper, and olive oil on top of the ricotta.
