Ginger & Garlic Lentils

INGREDIENTS

  • 2 cups Orange Lentils
  • 2 small Onions, small dice
  • 1 tsp. Fresh minced ginger
  • 7 cloves Garlic, minced
  • 1 8oz can Coconut Milk
  • 2 cups Swanson Chicken Broth
  • 1 tblsp. Butter, unsalted

DIRECTIONS

  1. Sweat ginger, garlic, and onions with butter on medium low heat. Do not allow the onions, garlic and ginger to build color.
  2. Pour the lentils into the pot and for about a minute allow them to toast.
  3. Pour the coconut milk and chicken broth into the pot and bring it up to a boil then simmer for about 35 minutes or until liquid is absorbed. Make sure to push some of the lentil with a rubber spatula to prevent sticking.
