Pineapple Yogurt Cake

INGREDIENTS

  • 2 cups All purpose Flour
  • 1 ½ cups Non fat Vanilla Yogurt
  • 1 cup Brown Sugar
  • 2 each Eggs, whole
  • 1 tsp. Baking Powder
  • 3 Tbsp. Butter, unsalted
  • 11- 12 each Pineapple, thin slices
  • 1 each Tangerine, zest

DIRECTIONS

  1. Preheat oven at 325 degrees.
  2. Mix together sugar and butter until it becomes a wet sand like texture.
  3. One at a time add your eggs.
  4. In a separate bowl mix together your baking powder and flour. Then gradually add it into the sugar mixture.
  5. Add your tangerine zest.
  6. Line a 6x4x 3 inch deep loaf pan with parchment paper. Pour all of the batter into the loaf pan and bake for 1 hour and 20 minutes.
