Pomegranate Citrus Salad

SERVING SIZE: 1/2 Cup
SERVINGS PER RECIPE: 3-4 Servings

INGREDIENTS

  • 1 Orange, segmented
  • 1 Pomegranate
  • 1 small Shallot, dice
  • 5-6 leaves Mint, minced
  • 1 bunch Scallions, sliced
  • 1 Tbsp. Salt

DIRECTIONS

  1. Cut the pomegranate into quarters and use your fingers to pop out the seeds, save the excess juice for flavor.

  2. Peel the orange and segment the orange, then slice them into smaller pieces vertically.

  3. Mince the shallot and mint.

  4. Slice the scallions.

  5. Then take all ingredients and mix into a bowl. Add the salt and let it sit in the refrigerator for 3-4 hours or overnight.
