- ½ c. reduced fat feta cheese
- 1½ c. blueberries
- 1½ c. sliced cucumbers
- 3 c. watermelon, cubed or ball
- 1 TBS lime juice
- 2 TBS mint leaves
- 3 TBS olive oil
- Salt and pepper, to taste
In a mixing bowl, stir together blueberries, cucumbers, watermelon and mint leaves.
In a separate small bowl, whisk together lime juice, olive oil, salt and pepper.
Drizzle dressing over the fruit/cucumber mixture; toss to coat.
Top with feta and serve!
