INGREDIENTS
- 2 cups Orange Lentils
- 2 small Onions, small dice
- 1 tsp. Fresh minced ginger
- 7 cloves Garlic, minced
- 1 8oz can Coconut Milk
- 2 cups Swanson Chicken Broth
- 1 tblsp. Butter, unsalted
DIRECTIONS
- Sweat ginger, garlic, and onions with butter on medium low heat. Do not allow the onions, garlic and ginger to build color.
- Pour the lentils into the pot and for about a minute allow them to toast.
- Pour the coconut milk and chicken broth into the pot and bring it up to a boil then simmer for about 35 minutes or until liquid is absorbed. Make sure to push some of the lentil with a rubber spatula to prevent sticking.
