SERVINGS PER RECIPE: 3 Servings
- 1 ½ cups Quinoa
- 2 cups Vegetable Stock
- ½ cup Black Beans, canned and rinsed
- 4 oz Raisins
- 1/3 cup Almonds, slivered and toasted
- 3 each Scallions, thinly sliced
- 1 each Lime, zested
- 3 tbsp. Red Wine Vinegar
- To taste Salt, Kosher
- 5-7 sprigs Cilantro, minced
Bring quinoa and vegetable stock to a boil. Once it is at a boil, lower heat and simmer until liquid is fully absorbed, approximately 12 minutes. Remove quinoa from the pot and let it cool.
As the quinoa is cooling combine the rest of the ingredients together and allow the flavors to incorporate.
