INGREDIENTS
- 1 lb Fresh wild salmon
- ½ each Red onion, julienne
- ¼ each Fennel bulb, julienne
- ½ each Lime juice, freshly squeezed
- 2 sprigs Basil, fresh
- 2 sprigs Dill, fresh
- 1 tsp. Mirin
- 1 tsp. Salt and Pepper
DIRECTIONS
- Preheat oven to 350 degrees.
- Take to sheets of parchment paper that are big enough to cover the fish. Place the fish on top of one of the parchment paper and lay all seasonings on top of the fish. Make sure that the seasonings are evenly distributed.
- Grab the other half of the parchment paper and place on top. Fold all sides in so there are no openings. The goal is to allow all of the flavors to infuse within the fish and vegetables without having the steam escape from the sides.
- Cook in the oven for 18 minutes.
