Triple Bean Salad

SERVINGS PER RECIPE: 4-6 Servings

INGREDIENTS

  • 1 package (12 or 16 oz) Edamame beans, frozen and shelled
  • 1 (8 oz) can Black bean, rinsed
  • 1 package (12 or 16 oz) Lima beans, frozen
  • 2 fresh Mangos, cut into small cubes
  • 5 tbsp. Cilantro, fresh and minced
  • 4 tbsp. Extra virgin olive oil
  • To taste, salt and black pepper

DIRECTIONS

  1. In a large bowl, combine all ingredients. Let sit for 1 hour or overnight.
