- 1 package (12 or 16 oz) Edamame beans, frozen and shelled
- 1 (8 oz) can Black bean, rinsed
- 1 package (12 or 16 oz) Lima beans, frozen
- 2 fresh Mangos, cut into small cubes
- 5 tbsp. Cilantro, fresh and minced
- 4 tbsp. Extra virgin olive oil
- To taste, salt and black pepper
In a large bowl, combine all ingredients. Let sit for 1 hour or overnight.
