Vegan Pancakes

SERVINGS PER RECIPE: 2

INGREDIENTS:

  • 1 ¼ cups Vanilla soy milk
  • 1/3 cup Water
  • 3/4 cups All purpose flour
  • ½ cup Cornmeal
  • 2 tsp. Baking powder
  • ½ tsp. Salt
  • 1 cup Blueberries, fresh
  • Cooking spray, as needed

DIRECTIONS:

  1. In a large bowl, mix the wet ingredients into the dry ingredients; fold in blueberries.
  2. Spray pan with cooking spray and scoop ¼ cup batter into the pan.
  3. Cook each pancake until golden brown and firm.
