Prep Time: 10 minutes | Cook Time: 15 minutes | Servings: 4
Ingredients
8 oz pasta of choice
1 cup cottage cheese
½ cup milk
½ cup grated parmesan cheese
2 garlic cloves
1 tbsp butter
Salt, to taste
Black pepper, to taste
Instructions
Cook pasta according to package directions. Reserve some pasta water before draining.
Add cottage cheese, milk, parmesan, garlic, salt, and pepper to a blender and blend until smooth.
Melt butter in a pan over medium heat and add the blended sauce. Heat gently until warmed through.
Toss cooked pasta into the sauce, adding reserved pasta water as needed to reach desired consistency.
Finish with additional parmesan and fresh cracked black pepper before serving.
